かつて若狭湾で獲れた海産物を京都へ運ぶ道として栄えた「鯖街道」。
今も山に囲まれた旧朽木村の鯖街道沿いには、何軒かの鯖寿司の店が点在している。その中でも『栃生梅竹』は一番人気の鯖寿司の名店である。
今年4月に「比良山荘」に行った時に、『栃生梅竹』に立ち寄り、極上鯖寿司をお土産で買って帰ったが、とても美味かったので、今回は作り立ての極上鯖寿司を食べに京都から車で1時間かけて『栃生梅竹』を再訪した。

◉この店の極上鯖寿司は限定品で、1キロある特大の鯖を使用。脂の乗った肉厚の塩鯖を酢で軽くしめてあり、薄昆布を鯖寿司の上に乗せている。
鯖寿司を頬張ると脂の乗った新鮮な鯖と良い塩梅の酢飯が混ざり合って、口の中に幸せを運んでくる。
作り立ての極上鯖寿司はやっぱり絶品鯖寿司だった❗️
東京からわざわざ滋賀の『栃生梅竹』まで来た甲斐があった。
