こちらのバーは、ワインとアイラ・モルトがメインです。
そこに４月から６月は隠岐産養殖牡蠣（生産者指定）が加わります。この特別な時期は、★５つ差し上げたいぐらいです。
牡蠣と合わせるお酒としては、究極のシャンパーニュのほか、シャブリ、日本酒などが上がりますが、アイラ・モルトは知る人ぞ知る、椎名誠がアイラ島を訪れたとき「俺がこれまでの人生で食べた牡蠣を全てアイラ・モルトでやり直したい」という凄いセリフを言ったらしい。
僕なら、「これまでの人生で食べた牡蠣の半分をシャンパーニュと合わせ、残りの全てをアイラ・モルトでやり直したい」という贅沢なセリフを言っちゃう。言うだけは只ですから。
シャンパーニュ、アイラ・モルトこれに隠岐産養殖牡蠣（生産者指定）の条件すべてを実現しているお店は、日本でも１０指で数えられてしまうと思います。本当に道楽者ですね。ここのマスターは。
隠岐産養殖牡蠣は、清浄な海で岩牡蠣の稚貝を育てるという非常に凝った養殖牡蠣で、ありふれた天然とは別物です。東京のマニアックなお店がわざわざ取り寄せるという、これも知る人ぞ知る存在ですから。しかもしかも、生産者指定で、特に透明感のある貝柱が凄い！
