久しぶりに鰻を食べに行きました。静岡の「かん吉」さん。蒸してから焼く「関東焼」がほとんどの静岡ですが、こちらは蒸さずに焼く「関西焼」だそうです。珍しいですね。
取り敢えず軽くビールを飲みながら、肝焼きを頂きます。
コイツが臭みは皆無で至極スッキリ。肝特有の苦味も薄い。苦味好き目線も踏まえれば賛否分かれるかもしれませんが、食べやすいという点では群を抜いてますね。
そして鰻重。確かに蒸しが無いため、関東焼きのふわふわ感は少ないです。しかし、以前名古屋瀬戸の「田代」さんで頂いた関西焼きに比べると、身の弾力と皮のパリパリも少な目。
蒸しに慣れている静岡県民向けに、少し焼きを軽くしているのかもしれません。
タレは少しカラメ。関東焼でよくある甘さは控えめです。故にご飯との相性は良いですね。このタレだけでご飯おかわりいけます。
個人的には、もう少し身に弾力があって、皮もパリパリだともっと好きです。
蒸しに慣れている静岡近郊の方の意見が気になりますね。
