そして、つけざるがやってきた。先ずは麺から食してみた。
麺は中細の縮れ麺。かん水の量、加水率共に標準的な印象を持った。
冷水でキッチリと〆てあるのでコシがある。一般的な中華麺といった趣である。
つけ汁のベースは鶏ガラを軸にした印象ながら、醤油ダレの効かせ方が強く、出汁感をあまり感じない。
昔、食したくっちゃいなのつけ汁は甘辛酸を備えたものだったと記憶しているが、醤油から来る塩味が支配的。
具は鶏チャーシュー、メンマ、ほうれん草、ネギ。
鶏チャーシューは前述のよだれ鶏と同じものだと思われる。
具材に特筆する部分は少ない。
