今回は華コース¥4400で。
頼んだ内容

・小さなアミューズ
・和梨とほうじ茶の液体窒素のグラニテ

・長野産 ワッサーの香草ロティパイ包み焼き

本日のウェルカムティーは
長崎の生緑茶。
さえみどりというお茶で甘味が強い。
綺麗な色合いでのいいスタート。
小さなアミューズには
焼きなすムースたこのマリネ。
オリーブオイルにはゴールドプレスしたノヴェッロオイルが使われておりこれが絶品。
あれ？ランチコース食べに来たんだっけ。笑
注文はデザート5種から2種を選び、
それに合わせてティーかティーカクテルかティーモクテルを作ってくださるスタイル。
まず1品目は和梨とほうじ茶の液体窒素のグラニテにティーカクテル。
注文してから1種類ずつ作ってくれます。
目の前で作られる姿も楽しい。
しっかりしたお茶の香ばしさと果肉を堪能。
ペアリングにはコニャックにはるみどり、金木犀やエルダーフラワーのシロップを合わせたティーカクテル。
長野産 ワッサーの香草ロティパイ包み焼きは
デザートでパイ包み焼き！？と面白いなと注文。
ワッサーという桃を丸々パイに。
デザートのようなメイン料理の一つのような。ペアリングは微発酵茶。
一煎目より二煎目の方が濃くなって行きますが
一煎目の上品な感じな方がより好きかも。
まだまだ良さを受け止めきれていない気もします。
お茶という新しい世界の扉を開いてしまった気がした。
10月からコース体系も変わるみたい。
また少し勉強をした上で再訪したいお店でした。
