藤枝市内に店を構える完全予約制の「備長炭焼鳥 鳥しげ」さんに伺いました。
アクセスは、JR東海道本線藤枝駅より歩いて8分程です。
店内にお邪魔するとおしゃれな大人の空間です。広々とした白木のカウンター席で落ち着けます。
紀州備長炭で焼き上げる素材の味わいを大事にした焼鳥店です。

150日長期飼育の伊豆天城軍鶏の雌を使われてます。内臓系は銘柄鶏50日のを使われているそうです。

お料理は伊豆の天城軍鶏や銘柄鶏や地場の食材を織り交ぜたコースになります。
基本どれを食べてもクオリティーが高いのでとても美味しいです。
天城軍鶏は歯応えがあり、濃縮な旨味に噛み締めると芳醇な脂が口に広がります。
脂がすっきりとしているため、濃厚な旨味に飽きることなくずっと食べれます。火入れが上手なのでより一層美味しかったです。この日は追加も含めて全品食べさせて頂きました。
大将は物腰が柔らかくて女将さんも笑顔が絶えない素晴らしいご対応でとても美味しく料理を堪能する事が出来ました。
