そして、ラーメンがやってきた。先ずはスープからすすってみた。
ベースのスープは鶏ガラを軸にした印象。
味の輪郭を成す醤油ダレの間から煮干しを中心とした魚介系の香りがするのだが、これは後入れで魚粉によって付けられたもののようだ。
最近の中川は判らないが、開店当初の中川はこの手法だったのを思い出す。
麺は細縮れ麺。かん水の量は多め。加水率は高めの印象を持った。
多かん水なので細麺ながらシッカリとした立体感を持っており、スープを程よく拾って来る。
この手の麺は初めて食すように思える。あまりお目にかかった事のない麺である。
具はチャーシュー、味玉、メンマ、なると、ワカメ、ネギ。
チャーシューは豚肩ロース使用の煮豚。
味玉は黄身が溶け出さない程度の茹で加減でネットリとしたタイプ。味付けは穏やか。
この味玉がトッピングとして他のラーメンに乗せられるかは未確認。
