It's definitely a tasty Tsukemen (Dipping Nudle). First, I tried the noodles. The noodles are medium-thin and curly. There was a slightly larger amount of kansui. The water content seemed average. When you focus only on the noodles, it's the presence of this nori that gives it that tasty feel. This nori, cut into large pieces rather than finely chopped, brings back memories of when I ate it back then. Then we move on to the dipping sauce. The base of the dipping sauce is a clear soup that seems to be based on chicken carcasses. There is also a slight seafood aroma and sourness. The butter gives it a rich flavor, and the balance with the sourness is not bad. The toppings are a seasoned egg in the noodle bowl. In the dipping sauce bowl, there is roast pork, bamboo shoots, and green onions. The roast pork is braised pork made from pork shoulder. The egg is not very generously served. In fact, its shape collapses in the dipping sauce. The seasoned egg is boiled just short of being hard-boiled. The seasoning is mild.
