後客も入ってきているので少し待つ形となったがタンメンがやってきた。
先ずはスープからすすってみた。
ベースのスープは鶏ガラを軸にした清湯スープであろう。
具材と共に煮込まれているため提供時のスープは濁りを帯びている。
タンメンにありがちなごま油に頼った風は見られない。
具材の旨味が出ているので普通に美味いタンメンスープに仕上がっている。
麺は中細麺で軽いウェーブを持つもの。
茹で加減はデフォルトで堅茹でに仕上がっている。
この硬質な印象は後半になっても結構続いている。
スープを良く持ち上げる。
具は豚こま、もやし、キャベツ、ニラ、人参、キクラゲ。チャーシューの類は乗らない。
具材はスープと煮込んで熱を入れている印象。特に豚こまの焼き目(メイラード反応)が見られない。
それは他の具材にも同じことが言える。
まぁ、調理工程を見ていないのであくまで推測の域を脱しないが。
