蕎麦についても、メニューやワサビ・山椒などの添え物についてもごだわっている。
蕎麦は福井産の細い蕎麦。
セットの前菜はどれも美味しい。
この日は、そばdeイタリアンというイタリア料理テイストの蕎麦を頼んでみた。
オリーブオイルと塩、ニンニクのすりおろしで蕎麦を和えている。
これって絶対合わない組み合わせかと思ったが、意外にもベストマッチ。
むしろ、蕎麦つゆで食べるより蕎麦の味を感じられる。
オリーブオイルが良質なものを使っているのが良くわかる。
塩加減がちょうど良く、蕎麦の個性を消していない。
このメニューを作るには相当な試行錯誤をしたと思われる。
聞くとビーガンのお客様が来た時に着想して創ったメニューらしい。
追加注文したおこわも美味しかった。
