徳島へ行くにあたり色々とお店を調べて、何となく美味しそうな感じがして予約しました。
あちこちで修業されたという情報を目にして、ベルギーっていうのはめずらしいですが、決めました。結果は当たりでした。とても良かったです。
内装や雰囲気はビストロのそれで、名前にたがいません。サービスもマダムを含めてきちんとされてます。
コースは5500円と6600円で、メインが異なるとの事でしたので、後者をお願いしました。
アミューズは赤ピーマンのムースでその後、前菜の盛り合わせで、パテカン、キッシュロレーヌなど出てきました。
サザエのブルギニヨンは、サザエちょっと苦手だったのですが、とても立派でくさみもなく美味しくいただけました。
フォアグラのテリーヌはインスタ通りで、周りに火が通っていることで、香ばしく仕上げられています。ちょっと変わってるレシピですね。
お魚料理はハモのポワレ。ソースも白ワインベースですが濃厚に仕立てられて、皮目がカリッとしていました。
メインは祖谷の夏鹿ロティ。本州の鹿ですが、新鮮で美味しかったです。
息子は鴨のコンフィで、これも真っ当な印象です。
デセールまで付け合わせも手を抜くことなく、しっかり作られています。
ちょっと遠いので今度はいつ行けるのか皆目わかりませんが、是非再訪したいお店です。
