石井町にある自然派ハム工房リーベフラウさん。
徳島の直営農場で丹精こめて育て上げた豚肉を使った無添加ハム，ソーセージ、ウィンナーを作っています。
店主が修行に訪れた本場・ドイツで学びました。
リーベフラウは，シェフケ・ダンカース氏から直接指導を受けて，ドイツでも修行をしてきた店主の近藤氏が本格的なハム・ソーセージを作るお店です。阿波美豚も扱っています。
最初から最後まで，手を抜かずに仕事をするという， 豚の飼育に始まり，生肉・加工などすべての工程に少ししつこいくらいのこだわりで取り組んでいます。

http://u.tabelog.com/000709368/r/rvwlst/21/)などドイツハム・ソーセージ等の有名店（コンクール金賞等と書いてあるお店）では，お客さんに，どんどん試食をさせて、好みの物を探してくれます。リーベフラウも試食をどんどんしていくべきに思います。
オススメはベーコン・信念スライスロースのハム・バイスブルスト・アイスバインなどです。
バイスブルストはドイツ南部のミュンヘンのソーセージです。 軽くボイルして皮をむいて食べます。 甘口のマスタードがよく合います。
アイスバインは豚のスネ肉を漬け込みオーブンで焼き上げたもので、南ドイツでよく食べられているタイプのです。
中心に骨があります。
今回はバーベキューを利用しました。
豚肉 ・豚肉ウィンナー ・野菜 ・ジェラート ・ドイツパン で 2.500円の食べ放題です。
雨でも大丈夫で，全天候型のバーベキューがいいところで，スグに始められる手軽さとストレートな豚肉のおいしさがあります。
ただメニュー構成は，サラダを増やしたり，もう少しハムやソーセージを種類増やして欲しいと思います。味が単調になるところがあります。
週末は混雑していて，けっこう満席の日があったりします。
