銀座にある和菓子店。
創業は1884年(明治17年)の老舗。
看板商品は「空也」と刻印が入った「最中」。
銀座の手土産として絶大な人気。
保存料や添加物等は一切使用しておらず、安くて体にやさしい美味しい和菓子です。

場所は銀座駅から徒歩3分ほど。
10日位前に予約をして訪問。

餡は北海道十勝産の減農薬栽培の小豆を生豆から丁寧にじっくりと炊いた「つぶし餡」。
粒餡でもこし餡でもない、その丁度中間位の餡。
餡を挟んでいる種(←皮の事)はパリッとしていて香ばしい。
添加物は不使用ですが、小豆と砂糖を高温で炊いているので1年を通じて1週間は日持ちするよう。
店主曰く、「3日目が一番美味しい」との事で、購入当日と3日目のものを食べ比べ。
購入当日よりも3日目の方が種(皮)はしっとり。
だけどフニャッとしているわけではなく、「ややパリッ」という状態。
餡と種(皮)が馴染んで一体化された感じで、購入日とは又違った美味しさ。
餡は甘過ぎず軽やかであっさりとした後口。
何個でも食べられそうな美味しい最中です。
