歌舞伎座の裏にひっそりとあるこちら。最近メディアの露出高めですが、やはり蕎麦店。回転が早いので外まで行列ということは有りません。本日も前、4人待ち。鰻の寝床のお店の通路で待ちます。
券売機にはもり、ざる、かけにかき揚げ、とろろ、卵などシンプル。券売機でもりのかき揚げ（490円）を大盛り（100円）で。すぐにお店の方に渡して、席が空くのを待ちます。
着席すると見えるカウンター中。美しすぎる天ぷら鍋。高級天ぷらでもこのくらいの手入れをしているかどうか。そこにはまたこれも澄んだ油。このかき揚げには雑味なし。
まずは蕎麦猪口に汁。辛口。続いて蕎麦。均一に切られた蕎麦は冷水で締められて、キリッと美しい。他の方のかけを見ると締めてから温めの本格派。これは侮れない。かき揚げは自分で崩さず、蕎麦猪口の大きさに手で割ってくれる。最初から一口サイズのかき揚げでは、衣が多くなることへの配慮。完璧。玉ねぎが主役のかき揚げはしっかり甘さが引き出されている。山葵は粉だけど、最初から少々のネギは旨さの引き立て役。
これは値段を考えると江戸最高の蕎麦と思います。卓上の蕎麦湯で汁を飲み干して、しみじみ感じました。
