銀座一丁目駅近辺をさまよってたどり着いたとんかつ屋さん。お店の外で待つことはできず、電話番号と名前を控えてもらって、お店からの電話を待ちます。
さて、上ロースのかつ膳を注文、揚げる音を聞きながら待ちます。音を聞くに、高温というわけではなさそうです。揚げ上がりを見るに、低温でもなさそうです。
そんな上ロース、カツが二段に盛られています。どうやら上段は塩で、下段はソースでと、味変して食べる模様。
衣もお肉も中庸です。脂身は丁寧に処理され、ほんのりピンクが残るお肉は、歯ごたえも、ジューシーさも本当に真ん中、絶妙なバランスで、塩味が甘さを引き立てます。脂というよりも、お肉の甘みでしょうか。
ソースはウスターソースととんかつソースの二種類。とんかつソースは、パワフルなソースです。お肉を主役にしたいので、ウスターソースに切り替え。肉の旨味を引き立てながら、適度な旨さと塩味を加えてくれます。
お米は言うに及ばず、とんかつ屋さんの豚汁は、どうしてこんなに濃厚で塩辛いのに、旨いのだらう。ただでさえ、とんかつというハイカロリーな料理を前に背徳感があるのに、それに輪をかける豚汁。
1,600円とは思えないクオリティでした。
カウンターだけの小さなお店ですが、訪問する価値のあるお店です。
