新橋から歩いて直ぐで、更にランチに1人で予約出来るこちらを１週間前に予約しました。
銀座のフランス料理としては破格のコース、どんな感じかな「SALLE À MANGER de Hisashi WAKISAKA」
前菜、メイン、デザートの３品のコースですが、それぞれ３～４種類から選ぶプリフィックス
次の予約が有るので、軽く様子見の感じでしたが・・１品のポーション多め

甘いトウモロコシを輪切りにして芯を抜き、トウモロコシのムースを詰めて雲丹を乗せた料理
ここで雲丹の質が悪いと台無しですが・・流石にバッチリ。

“貧乏人のフォワグラ”のパテ “ほぼフォワグラ″のパテ◯

付け合わせのサラダ類が前と同じ物(^^;
レバーパテでプルーンを包んだ物で単独だと食べきれない感じでしたが、バゲットに乗せて
マーマレードと合わせると絶妙なマリアージュであっと言う間に完食。合わせたワインともバッチリ

国産牛 バヴェットのソテ エシャロットソース○
Bavette à l’échalote
１頭から2kg程しか取れないカイノミを使ったステーキに濃厚なエシャロット(玉葱)のソース
付け合わせはインゲンとジャガイモ。 丼でも行けそうな旨さ
◇DESSERTS～デザート～
プリン○
カラメルが苦甘い所にカスタード感の有る木綿豆腐に近い食感のプリンは、ギンレスプリンを彷彿
プリンと言えばコレという位に好きな味と食感。
◆珈琲
フランスでも真ん中辺のスイスに近い辺り・・郷土料理的で味付けの濃い昔ながらの感じ。
ボジョレーやコート・デュ・ローヌの赤ワインと共に。
実は事前にメニューを調べて、最初からオーダーする料理を決めて伺いました(^^;
貧乏人のフォアグラと言われるレバーパテに自家製マーマレードが絶品
レジの辺りでマーマレードの販売が有りますが・・ここはレバーパテも一緒に欲しい！
※売ってないけど残した物を持ち帰り出来るとの事
ステーキもてんこ盛りで、やっぱり食べ過ぎたー
店員さんが大学の頃のフランス語の教師に似ていて、所々にフランス語が出て来て良い感じ。
（因みに自分は理系なので第3外国語は単位外でした）
シェフもサーブしたり、ワインの選択時にも登場して1人でも行きやすいフレンチです。
