遅めの13：30頃のランチタイムに伺いました。
地下へ降りると高級感のある大きなカウンターに通されました。
オーダーはもう決まっていたので、口コミで高評価のちらし寿司にしました。
（大盛、並、小が選べます。）
ラストオーダー直前だったので、カウンターには私一人で、付け場には若い大将が夜の仕込みを行っていました。
（その日の夜は予約で満席と張り紙がありました。）
まず、先附が出てきました。
お浸し、ゴボウの甘辛煮、香の物、新生姜のガリです。
鮨屋のガリはスライスしたものを想像すると思いますが、鮨正さんのガリは新生姜を乱切りにして甘酢を付けたものでした。
このガリが素晴らしくて、メインのちらし寿司を食べる前に「この店は只者ではないな」と感じさせる逸品でした。
メインのちらし寿司はマグロ、アナゴ、イカ、タコ、白身などが入っていて、基本の味付けは山形県のダシのような感じで味付けされたキュウリが散りばめられていて、特に醤油はいらないと説明を受けました。
掻き込むようにちらし寿司を頬張って食べていたのですが、明らかに大トロだと分かるのがあってその部分だけは箸でつまんで大トロを堪能しました。
一人で食べていたからか、着物を着た非常に気さくなホールの方がしきりに話しかけてくれたり、大将がいろいろと話をしてくれたり、普段から請うような接客を行っているんだなと感じました。
やはり、銀座の鮨屋というのは食べるところでもあるけれど、場を楽しむところなんだなと感じたランチでした。
