This is a sister restaurant of Hyoutou Kyoto. We have recreated the inner sanctum of Kyoto in Ginza. All seats are completely private. We are certified as a "No-Crowd Restaurants" so you can use it with peace of mind. We will provide you with hospitality for meetings, first meals, celebrations and happy occasions. 今宵は東銀座。
ビルの地下にある落ち着いた風情の和食屋さん。
先ずは生ビールから。
献立
○重箱 上段 八寸
写真右手から
・胡麻豆腐 美味出汁 辛子
・鷄味噌松風
松風はすり身肉に卵などのつなぎと調味料を入を混ぜて型に入れて、天日などで焼いた料理。僕はボソッとした食感がにがってなんだけど、肉が鶏肉なのと味噌が入ったせいか今回は気にならなかった。
・枝豆塩茹で
・インカのめざめ素揚げ
・紫花豆蜜煮
・新丸十蜜煮
丸十と書いて薩摩芋。
薩摩藩の家紋が○に十字から成っているからだ。上品な適度な甘さの蜜煮だった。
・赤蒟蒻土佐煮
滋賀県名物との事。
赤いのは唐辛子だと思っていたら
鉄分との事。
なので辛くはない。
・若桃甘露煮
僕は大きな青梅だと思っていた。
見た目より甘〜くて美味しい。
・玉子チーズかすてら
チーズ感はそんなに感じなくて食べやすい。
・鯖の松前寿司
鯖に昆布を巻いたものが松前寿司。
食感が〆具合も丁度よく美味しく頂けた。

○水なす 金山寺味噌
生食出来るのは
アクが少ない水なすだから。
金山寺味噌が良いね。

出汁しゃぶ 白金豚
白葱 柚子胡椒
白金豚は岩手県のブランド豚。
円やかで柔らかい肉質。
今回は薄切りで
野菜もきのこもたっぷり。

純米吟醸 山廃仕込
四合瓶13000円を
それぞれ一合ずつ。
どちらも飲みやすい、
僕のお気に入り
鳳凰美田の方が香って色気があるかな。

水蛸湯引き
胡瓜 若芽 マイクロトマトのトマト
土佐酢ゼリー掛け
土佐酢は三杯酢に鰹などの出汁を加えた酢で
円やかな味わい。
サッパリと頂けた。
○食事 生蕎麦
細切りの蕎麦で
オツに鍋の出汁でサッと茹でて頂いた。
○デザート
黒糖わらび餅
和食の〆らしいけど
一工夫あっても良いかな。
個室でゆったりと頂く
和食のコース。
良い時間を過ごす事が出来た。
