I used it for a meal with friends. It is a restaurant where you can enjoy Kyoto cuisine using plenty of seasonal ingredients. Here, thorough ventilation and hygiene management in the store are carried out. Alcohol disinfectant sprays are also available on the table. Since all seats are private rooms, the distance between you and other customers is open and you can use it with peace of mind. This time, I received the finest black pork soup shabu Kyoto course (¥8,500). The first thing that came out was the eight-inch and the topping, and the construction. I was particularly surprised by the construction. Sea bream with salt kelp, plenty of raw sea urchin, and caviar. And it is a gorgeous dish with brightly colored vinegar jelly sparkling. Not only does it look gorgeous, but it also tastes exquisite. The smooth throat is addictive. The physalis that came out in the eighth inch was more delicious than I had imagined. It was sweet and sour, and the fluffy and refreshing flavor spread in my mouth, and I was immersed in its aftertaste for a while. And the specialty of this restaurant is "dashi shabu"! Carefully selected high-quality black pork was dipped in the restaurant's special broth. This dashi shabu is an original that originated in Kyoto's founding restaurant "Gourd". The soup stock, which is made with natural domestic kelp, bonito flakes, boiled dried fish, and a special "kaeshi", has a rich yet refreshing mouthfeel. It enhances the flavor of the meat even more. It is also attractive that they offer a "soup out" service at the right time. This soup is also very ingenious, and they offer something a little thicker than the first soup stock. Therefore, it does not become thin until the end, and you can continue to enjoy the rich flavor. In addition, the meat is "Kagoshima Black Pork", which has a history of 400 years. Kagoshima black pork, which grew up eating sweet potatoes, contains plenty of amino acids, which are umami ingredients. If you mix it with plenty of broth, you will be surprised by its umami and sweetness. And what I was most happy about was the white onion service. If you run out, you can replace it, so I was spoiled by your words and replaced it. Eating white onion and pork together is effective in relieving fatigue and preventing aging. It's an effect that makes me too happy because I've been exhausted lately. In dashi shabu, you can eat not only meat but also plenty of seasonal vegetables, which is healthy. It seems that the type of vegetables changes according to the season at that time. Among them, the noodles with a flower motif were cute and delicious, and I was very healed. Depending on the season, there may be noodles with autumn leaves and cherry blossom motifs! I'd like to come back in the fall. In addition, there were golden thread melons (a type of pumpkin), red konjac, and various rare noodles, and I was able to enjoy the appearance and taste. After having the famous "dashi shabu" ... * I also had baby kelp, red onions, and mizuna soaking * sea bream tea pickles * brown sugar warabi mochi. You can enjoy the meal without getting tired of it because it continues consistently until the end. You should have been full of dashi shabu, but you can eat as much as you want because it's delicious. As it is a restaurant that has a particularly strong commitment to soup stock, the soup stock with sea bream tea is also exquisite. Although it is not shown in the photo, there was also yuba in the soup stock. The broth, which has a gentle taste and a sense of depth, further enhances the flavor of the sea bream. In addition, the recommended Japan sake that I heard from the clerk Mr./Ms. was so delicious that I was surprised. There was a wide variety of Japan sake that went well with the meal. This store is also running takeaway. There is a wide variety of dishes such as the exquisite "dashi shabu" introduced in the previous post, sukiyaki, and Bento (boxed lunch).
