流石2つ星！料理も接客も素晴らしい！
ミシュラン2つ星のフレンチ店『ドミニク・ブシェ トーキョー』さんを訪問。
料理は勿論ですがサービスの質がとても良かったです。
高級なお店で少し緊張したのですが、つかず離れずの距離間も保っていただいたので緊張も溶けてきました。距離感は保ちつつ、決して放置ではなく、こちら側の動きや視線をきちんと気にかけてくれています。相方がトイレの際にナプキンを落とすと、相方が見えなくなった瞬間ににっこりした表情でさっと拾って新しいものと取り替えます。外国の従業員の方も日本語でしっかり説明してくれます。
ミシュラン2つ星に恥じない素敵なお店でした。是非また来たいです。

4年ぶり2度目の訪問。前回の印象がとても良く今回も期待の訪問。ミシュランガイド東京2024でも一つ星を獲得している。場所は銀座一丁目。有楽町線が下に走る銀座柳通からレンガ通りにぶつかった所を京橋側に歩いて左手のビル2階にある。
メニューは写真を参照頂きたいのですが、特に美味しかったのは、牛テールの赤ワイン煮込みと金目鯛のヴァプールです。前者はお店のホームページで、2000年のTV番組「料理の鉄人」でミレニアムカップを受賞した料理と紹介がある一品です。一つ一つの料理が繊細で隙がなく、魂が籠っていると感じました。言うことありません。
2013年から営業していて10年が過ぎ、すっかり銀座に定着しているのは銀座でも他店に負けない確かなクオリティーがあり、認められているからだと思います。また来ます。ご馳走様でした。
