とにかく大好きなんです、レストランオザミ…。東京行くと可能な限り訪れたいお店。
今回は鹿肉が選べるルロワを選択。ワインはマリアージュセットをお願いしました。
いつもの窓際席にご案内いただきました。眼下には向かいの美容室、LIPPS Ray GINZA店が見下ろせます。
アミューズはラディッシュを花びらのようにして野菜のムースかな？とともに小さなスプーンに盛ったもの。乾杯シャンパンと合わせて。
1皿目はフォアグラと根セロリのムースの上にりんごの角切りとゼリーを乗せたもの。ワインは20年熟成のアルザスのリースリング。濃い黄金色、甘さと深みが共存してこっくりとした味わいですが、りんごや根セロリの風味を邪魔せず、絶妙に食欲を目覚めさせてくれました。
2皿目は帆立貝を軽く炙ってサフランと柑橘と帆立のヒモ？で出汁をとったジュをかけてキャビアを乗せたもの。ワインはアレクサンドル・バンのピエール・プレシューズ。ジュの複雑な味がミネラリーなソーヴィニヨンブランの白ワインとマッチ。ワインの名前は、ワイン畑の特徴である石の多い土壌とワイナリーオーナーに誕生したご子息の名前から『大切なピエール=石』なんだとか。
3皿目はオマール海老と海の幸のゼリー仕立てにオマールのソースをかけたもの。ワインは1皿目に合わせたのと同じアルザスのワイナリー、クリスチャンビネールのオレンジワイン、SI ROSE。シ-ローズには薔薇の意味もあり肝硬変の意味もあるそうです。飲み過ぎ注意。
4皿目は昆布締めのフグの身に軽く火を通してナスを敷いてビネガーをかけたもの。和食なら酢の物代わり。さっぱりした白身魚の料理にはマルサネを合わせて、次の皿までに胃をリフレッシュさせます。
魚のメインは甘鯛の鱗焼き。品数が多いコースなので油の量に気を遣っているのか、ブールノワゼットではなく優しい味の緑のソース。ワインはドメーヌ・アンドレ・ペレの畑でも最上級のコトー・ド・シェリーで生まれる最上級コンドリュー。ここまで出てきた5杯を締め括る素晴らしく豊潤な白ワインでした‼️
さていよいよ鹿肉‼️最高の焼き加減で正に薔薇色‼️塩加減がまた絶妙です。ソースには鹿肉のジュが使われていると思うのですが、肉自体に仕掛けられた塩がソースと相まって膝の力が抜けるほど美味しい‼️合わせるワインはサンテステフのメイネイとシャトードラボルドのジュブレイシャンベルタンvvで迷い、どちらもいただくことに…メイネイは2019と若いこともあり、しっかりしていますが鹿肉の風味を打ち消すほどの重みはなく、野生の血の味を良く支えてくれました。ジュブレイはブルゴーニュのピノらしく華やかで優雅で、鹿肉の風味を引き立ててくれます。
プレデザートのローリエとブラッドピーチのヴェリーニ、デザートがおそらく、さくらんぼの味がしたからフォレノワールかと思うのですが…。
これだけいただいても満腹で動けなくはならないで、深い充足感だけが全身を満たします。
料理はもちろん、ワインのマリアージュ、接客、サービス、お店の雰囲気、とにかく全てが素晴らしい‼️また来ます‼️ご馳走様でした。
