東京都中央区銀座の焼肉山水で「生焼肉」を食す。
最寄り駅は銀座駅。
“どうせ食うならうまい肉”をコンセプトに掲げる、東京国分寺に本店を構える焼肉屋さん。
2名で訪問。
まずは、生ビール(キリン一番搾り)で喉を潤す。
続いて、キムチ盛り。
オイキムチ、白菜キムチ、カクテキの３種。
さらに、山水サラダ。
醤油＆酢がベースのドレッシングがかかるさっぱりサラダ。
そして、牛ローストユッケ。
一本一本のカットサイズが極太のユッケ！
卵黄のコクと肉々しさが相まってたまらない味わい！
と一品モノをいただいたところで焼きモノ登場！
まずは、生タン塩。
ただの“タン塩”ではなく、“生タン塩”。
どうして“生”が付くのかと言うと、冷凍肉ではない『生肉』を使用しているから！
さらに、その日ごとのお肉のベストの状態でいただけるように、職人さんによる『手切り』を採用しているというこだわりよう！
軽く炙る程度に焼き上げたところをいただく。
タン特有のザクザク食感ではなく、なめらかでとろけるようでありながらも食感はさっくり！
冷凍肉では味わうことのできない、まさに生肉ならではのクオリティ！
続いて、生カルビ。
さっくりと心地よい食感と共にあふれ出す上質な旨味がこれまた秀逸！
ハラミ。
肉繊維がさっくりとほどけるような食感がクセになるー！
さらに、生レバ焼き。
これまたぷりぷりでトロけるようなおいしさー！
そして、山水ステーキ(ヒレ)。
これがヒレ？と思わず疑いたくなるような食感とみずみずしさ！
生焼肉恐るべし！
赤身を存分に堪能したところで、-shiro-盛り。
ギャラ、ハチノス、上ミノ、ホルモンの４種盛り。
ホルモンならではの食感と味わいを楽しんだところで、
〆にテグタンクッパ。
辛味噌ベースの野菜たっぷりクッパ。
食後にアイスクリーム(バニラ)をいただいて、
そのまま一気に完食。
衝撃的な味わいの生焼肉が楽しめるお店。
めっちゃおいしかったー！
