銀座「かねさか」で修業を積み、その後「すし家」の大将をしていた石山さんがオープンしたお店。
銀座の無印良品のビルの隣にあります。
2週間前くらいに電話で予約。
ランチは、握り14貫、握り18貫、おつまみ入りの夜のコースから選べます。
今回は14貫のコースにしました。
【注文したもの】
☆握り14貫 ランチコース 12000円×2
☆一粒の麦 炭酸割り 7～8杯
☆田中六五 2000円
2人合計37000円くらいでした。
シャリは赤酢がきいていて酸味が前に出すぎないのがとても好みでした。
お米は口に入れるとほどけるようにネタと一緒になる印象。
握る直前に毎回シャリを裏から持ってきているのが珍しい。
炊き方や温度を変えているのでしょうか。
特に美味しかったのは中トロ、アオリイカ、鯵、雲丹ですね。
中トロは少し熟成感があり、普段食べているものとは別格でした！
アオリイカは目の前でイカを3枚おろしにするという丁寧な仕事を見ることができます。
さらにその薄いイカを細く切ってなめらかに。
とても甘みがあって美味しいイカでした。
あとはこちらで有名な鯖の棒寿司！
名物なだけあって納得のおいしさ。
ラストの卵焼きもプリンのようななめらかさです。
14貫で足りなければ追加しようと思っていましたが、とてもお腹いっぱい！
大満足のランチコースでした。
