イノベーティブでも伝統料理でもなく、高良フレンチ
周囲が毎日のように訪れるレストランに、遅ればせながら行ってまいりました「ラフィナージュ」。
店にはいるとまず、カウンターの真ん中に置かれたエシレバターに目が釘付け。こんな大きなポーションがあることに驚きますが、心置きなく使えるというのは、実際フレンチを食べるときにはそんなに使わなくてもうれしい心遣いです。
カウンターとテーブル、個室があり、ゆったりとしたしつらえです。この日はカウンターでまずはシャンパーニュから。料理はまさに高良フレンチ。最新フレンチの尖ったところではなく、土着の古典的なところでもなく、旨いフレンチとはこのことだろう、という自信と余裕を感じさせる料理でした。きっと和食が好きな人を連れていっても満足してくれるだろうと思わせます。高良さんのいまの到達点ですね。ペアリングのワインも素晴らしく、満足です。
