ランチで伺わせて頂きました。
シェフは銀座レカンで料理長を勤めた高良シェフ。
クラシックなフレンチが好きな私は期待して伺わせて頂きました。
まずアミューズ一品目は魚のすり身を使ったコロッケ。
2品目はカブのムース。
アントレがカニと帆立の2品。ポワソンスズキ。ヴィアンドが牛でデセールがフォンダンショコラでした。
まずどの料理もソースが美味しくて火入れから塩加減全てに置いて素晴らしかったです。
デセールもフォンダンショコラはもちろんですがトンカのアイスも香りがとてもよく素晴らしかったです。
カウンター越しから見える一生懸命シェフとお弟子さんが作る姿がとてもライブ感がありとても良かったです。
この価格でこの品数でこのクオリティ。今日食べた一つ一つの料理全て安定したおいしさで全て外れてなかったです。
いい意味で枠から外れてなくて誰もが好きなを食材を使用したメニュー構成も素晴らしかったです。
必ずまた伺わせて頂きます。
