ソースの魔術師と呼ばれる高良 康之氏が沢山の鍋を使い目の前で調理が見られるカウンター席で
もっと重い料理を想定していたのですが、季節柄か軽めのソースに微妙な発酵感と酸味
付け合わせに苦みを加えて重くは無いけど重厚さと爽やかさが同居してる感じ。
更に各皿の火入れが素晴らしく、素材なりの食感を引き出して提供されます。
シェフの脇を固めるのは、歳の差倍以上違うのでは？と思われる若い人達で人不足とは無縁(^^;
日本に来る外国人は和食や鮨店に殺到してるっぽいので、本当に良いこの様なお店こそ日本人が行くべき。
