この牛を超える牛には一生出会いないだろう。
いくら食べても一切胃にもたれなどの負担はありません。
丁寧に掃除された美味しい部位のみをいただきます。
最初にヒスイ豆の美しさに感動しました。
牛と鯛の海苔巻きは綺麗で美味しい。海苔の上に肉と鯛を並べ初めて…。初めて見る光景に驚きです。生産者の上田さんに感謝です。
ホッキ貝、たいらぎ、赤貝、鳥貝のカクテルは大人の味ですね。
サーロインと塚原の筍の鍋は、京都の緒方さんの出汁で鍋仕立てにされています。サーロインが口の中で溶けてなくなる様は文字には表せないですね。この取り合わせは神かかっていました。感動です。
炭の上に直乗せするたたきは、断面がいかにも美味しそうな色です。脂の存在はありません。柔らかくて最高です。
焼き筍を山椒でサラダ仕立てで食べます。爽やかですね。
ヒレ肉の唐揚げが美味しい。福井の地辛子が辛くて、香り高くて良いですね。
氷の器に入ったそうめんで胃を休めます。出汁が美味しい。
サーロインとシャトーブリアンの釜焼きステーキには何も言葉が出ません。
食運に恵まれたとしか思えない素敵な夜です。
〆は、銀の三日月と牛時雨煮です。お代わり２杯追加でした。
セトカのゼリーにはワインソースがかかり、一切手を抜かないおもてなしを全身で感じました。
