肉屋田中さんに初めて伺いました。BOSS(大将)が今日は凄い肉ですとされた、但馬牛メス(神戸牛)50ヶ月と51ヶ月をラッキーにも頂くことが出来ました。
赤身の旨味が非常に強いのですが、脂がサラッとしていて、雑味が無く、自分の食べていた牛肉とは全く違う味わいでした。
特に霜降り系で違いが強く、印象的だったのはサーロインとシャトーブリアンのステーキ、ハネシタ、ヒレ肉の竜田揚げで、貝の筍も素晴らしい料理ですが、肉が全てを持っていく感じでした。
肉そのものと真剣な眼差しで火入れされるBOSSの集中力がこのお店のスペシャリテである事を理解した次第です。いやー凄い肉でした。
