銀座6丁目のビル６Fにある結絆は創作会席料理のお店。
パステル調の装飾を排した落ち着いた内装の個室やシェフと素材について語れるカウンター席もあり「食」に集中し楽しませてくれる。この日は11品目。訪れる秋を嗅覚で感じさせるコースだ。
「ホワグラの茶碗蒸し」は当店のスペシャリテ。
ホワイトマッシュルーム、玉ねぎとホワグラのソースを乗せて後味と余韻はいつまでも続く。次の料理までしばらく時間を置きたいほどの香りであった。
「玄界灘産大鯛の松川造り」は鯛の刺身を厚さ違いの3種盛。
噛めば噛むほどに旨味が滲み出、厚さ違いで咀嚼力も変わることに
より旨味の広がり方の違いを楽しませてくれる。
付け汁の煎り酒は日本酒に梅と鰹節をにつめてた煎り酒。
塩ともに、旨味を引き立てる。
7.5キロの鉄鍋を使用した「ハモ鉄板焼き」は、皮のみパリパリに焼き上げ、白ワインをベースにエシレバター、生クリーム、塩をブレンドしたリッチなソースにあえて。
添付にはメークイーンの千枚焼き。
エシレバターを使用し、澱粉質にバターの芳醇は油脂感がしみわたり、トリュフをかけて
れば、ジャガイモが超高級料理に格上げされたようなリッチな味わいに変化している。
「黒毛和牛のフィレ肉の悠久焼き」は約1.5時間60度以上にならないように低温で焼き続けた牛肉をトリュフ醤油と蝦夷わさびで。
一瞬でかみ切れるほど柔らかい赤身からは、表面の焦げ目で閉じ込められた旨味成分が広がる。
「松茸の釜炊きご飯」は、松茸を、ホイル焼きにしてから蒸らしてご飯に香りを移し、米粒にマツタケの香りが閉じ込められたようにも感じる。
ごはんは少々硬めに炊くことにより、マツタケのコリコリ感とよく馴染んでいる。
汁は桑名産ヤマトハマグリ。調味料的な要素のない潮の自然の味わいそのもの。
メニュー名も「蛤の酒蒸し小鍋仕立て」小さな鍋に旨味が凝縮しているような感覚である。
特に夜は接待や特別な日のディナーなど、「誰かに食べさせてあげたい」演出と味わい。
接待でも間違いなく喜ばれるだろう
