美味しい和食をゆっくり楽しみたいと思い、
以前から気になっていたこちらのお店に初訪問しました。
店内に入ると、目に飛びこんできたのは、大きなライブキッチン！
そしてライブキッチンを眺めて楽しめるカウンター席に案内して頂きました。
今回は、「結絆おまかせ定番コース」を堪能しました。
日によってメニューは変わるそうですが、
調和のとれたコースのお料理一品一品に、非常に感動しました。
◼️薪火焼き本鮪かまトロの削ぎ落し
「愛国」玄米の梅シャリを添えて
→本鮪をあざやかにさばいている様子を見た後、しっかり脂がのりつつも繊細な味わいの、かまトロの削ぎ落しを頂く瞬間は最高です！
◼️玄界灘産大鯛昆布だし氷締め
→煎酒、藻塩 、だし醤油で楽しむ鯛は、素材の良さを活かしてあり、触感を含めて絶品です。
◼️薪火焼き蝦夷鮑モエシャン仕立て
松茸ブールブラン
→エシレのバターを使った、和食の域を超えた一皿。松茸の香りがたまらない！
◼️結絆名物フォアグラの茶碗蒸し
きのこ餡かけ
→フォアグラの旨味の感じられる茶碗蒸しは、味も香りも濃厚で印象的。
◼️黒毛和牛フィレ肉の悠久焼き
トリュフ醤油 蝦夷わさび
→フィレ肉を柔らかくジューシーに焼いてあり、口に入れた途端に感動しました。
◼️カマスと新生姜の釜炊きごはん
大和蛤の酒蒸し小鍋仕立て
→ごはんを口にほおばる度に、新生姜の香りが拡がり、カマスの味も追ってくる、上品な一品。たくさん食べても、また食べたくなります。
どのお料理も、美味しいだけでなく、「五感で味わう」ことを楽しめるような美しさ、香りで、和食の国に生まれて良かった、と感じさせてくれます。
ドリンクメニューもバリエーション豊か。
日本酒「十四代」や「梅乃宿 あらごし梅酒」はお料理によく合います♪
