冬の味覚を代表する“蟹”
中でも越前漁港で揚がる“越前がに”は別格でありまして、日帰りでも漁ができるほどに漁場が近いことから他とは比べものにならないほどの新鮮さが味わえると言うのであります
そんな越前がにの雌を地元では“せいこ蟹”と呼び、内子や外子をたっぷりと抱いていることから好んで食べられているのだそうで…
漁が許されるこの時期だけの味覚である“せいこ蟹”を使った丼がいただけるとのことで、マロニエゲート銀座の12階にある『鯖街道』を訪ねることにいたします
“北陸海鮮 喜心”と書かれた白地の暖簾を潜り予約をしていることを伝えますと、4名掛けのテーブルが6卓並べられる小さなホールの窓側席へと案内していただけましたし…
ほかには6人掛けのテーブルが1卓置かれる半個室がひと部屋あるだけと意外にもこじんまりとしたお店であることから、丁寧な仕事をした上質なお料理がいただけそうだと期待を膨らませます
ほどなくお目当ての「せいこ丼」が配膳されます
丁寧に身を解していただけていることもありがたいことですし、その量は蟹1.5杯分であるとのことで見応えも十分であります
そんなどんぶりはわさび醤油でいただくこともできますが、お盆に添えられている蟹酢やわさびだけでいただくことで蟹身の旨みを楽しくこととし…
肩肉や爪、内子に外子と、それぞれを別々に味わってみたり、いくつかの部位を混ぜ合わせることで複雑に絡み合った旨味を楽しんだりと“せいこ”のおいしさを堪能いたしました
また、人肌に近いシャリの甘酢の旨みが蟹のおいしさを引き立てくれましたし、接客を担当してくれたスタッフの感じ良さもあって大変満足なランチとなりました
