I visited a Japanese Cuisine restaurant that opened on March 31, 2021 for lunch. The location is Ginza 6-chome, along the alley between Taimei-dori and Sukiya-dori, on the first floor of the lovely long-established multi-tenant building ``Yugen Building'', where ``Sushiya'' used to be. A refreshing interior with only 7 seats at the L-shaped counter. It's just the right size because it's prepared by the master himself. There is only one selection course on the menu. Today, I made a reservation in advance for [b: Lunch course] ¥10,000 (evening course is ¥13,000).・[b:Funkawan hairy crab, parsley, bracken] The season for delicious hairy crab has arrived. Pair with wild vegetables, Japanese parsley, and refreshing jelly.・[b: Steamed abalone, grilled raw drumstick, Bar Sushi, Noto mozuku vinegar] Abalone from Ohara, Chiba Prefecture, paired with liver sauce. All of the dishes go well with alcohol, but it's too bad that we can't drink sake due to the state of emergency. . .・[b: Kuwana clam soup] With yuzu flowers floating on top. The clams are very thick and chewy, and the flavorful soup stock is also delicious.・[b: Flounder from Aomori, red bean liver ponzu from Yoichi] The flounder is aged for 10 days and has a very calm taste. As the name suggests, this rice has a good aroma. It's delicious with rice alone, but of course you can also serve it with rice. Yamayuki's tuna weighs 156 kg and was caught in Noto. A medium-fatty bowl of rice topped with rice is sure to be delicious. The restaurant's name is unusual, ``Wa Michiko,'' but the ``wa'' character appears to have three kanji characters in it: ``wa'', ``wa'', and ``wa''. They said, ``We purchase good ingredients and keep our cooking simple,'' and the taste is just as you expected. The food was very delicious, with ingredients that were in season, fresh, and left over from this time of year. Currently, prices at Japanese-style meal restaurants are soaring, so the prices especially at night feel reasonable. Master Komai, who was trained at the famous Japanese-style meal restaurant "Ginza Izariya", is 28 years old! I'm still young, so I'm looking forward to seeing the changes in the future.
