GUCCIが展開するレストラン「グッチ・オステリア」の
2023年時点ではフィレンツェ、ビバリーヒルズ、東京、ソウルと
世界に4店のみのうちのひとつ銀座店。
オステリアとは名ばかりで、しっかりとグランメゾンの様式。
レストランは4階にあり、1階のアプローチからグッチらしいパターンと色彩で
一歩足を踏み入れた時点で異空間・非現実な世界が広がっています。
2023年10月時点のランチは税込サービス料別で
16,000円(日曜のみ18,000円)と常識路線な価格設定。
この日は諸事情でお酒が飲めなかったので
ワインの内容、価格設定は確認できておりません。
① アミューズ
アンティパストに入る前にフィンガーフードが
3種類とフォカッチャとグリッシーニ。
フランチャコルタかシャンパーニュが飲めていたら
さぞかし最高だったことでしょう。
② マーレ・エ・モンティ (Mare e Monti)
マーレ(＝海)とモンティ(＝山)と名付けられた前菜。
エビと和牛をタルタルにしたものの上にりんご型の春巻き。
周りにもりんご系のソースでさらにテイストの足し算がされています。
③ ツナのトラメッズィーノ (Tramezzino al Tonno)
トラメッズィーノ＝サンドウィッチ？と思わず二度見してしまう
奇を衒ったひと皿で、風味のついたエスプーマの中に
野菜とマグロのマリネ的なサラダ料理という位置づけでしょうか。
④ トルテッリーニ、パルミジャーノ・レッジャーノ・クリーム (Tortellini with Parmigiano Reggiano Cream)
パスタ料理はこちらのスペシャリテ。
数種類の肉のミンチ状の詰め物がされたトルテッリーニ(ラビオリ)に、
これでもかと言わんばかりの濃厚な
パルミジャーノ・レッジャーノのソースが
惜しげもなく使われています。
この料理も然りですが、料理全般にガツンとした
濃いめのテイストなので、やはりワインと合わせるのが
鉄則なのかもしれません。
お酒を飲んでいる人とそうでない人で料理の印象も
かなり変わってくるような気がします。
⑤ アクアパッツァ (Acqua Pazza)
メインはお魚料理でアクアパッツァ。
例によって我々の想像しているアクアパッツァの
それとはヴィジュアル面で違っております。
下にお魚、薄くフリットされたものの上には
イカスミベースのソースで頂きます。
⑥ ポップコーン (Popcorn... Tribute to Massimo Bottura)
⑦ プチフール (Piccolo Forno)
ワインを飲まなかったのでソムリエの方とは
関わらなかったのですが、サービス陣はさすがの
ジェントルさでレストランの格に則した素晴らしい態勢でした。
