東京を離れる前に週末の早朝で閑散とした銀座8丁目に店を構える「銀座稲葉」で朝食を。
稲葉正信シェフは六本木「グランドハイアット東京」の開業にともない、寿司「六緑」の副料理長に。その後、汐留「コンラッド東京」の日本料理「風花」のオープンに参画し、2010年に総料理長に就任。2016年には三重・伊勢志摩のリゾート「アマネム」の総料理長となり、その朝食を米国の雑誌『BRIDES』における“TheBestHotelBreakfastsintheworld”に導く。2021年、自身の名前を冠した「銀座稲葉」を開店。
朝食は平日10:30～、土曜日のみ9:00～、10:30～の2部制です。
2023朝食膳\8,800の1コース。
朝食に\8,800なんて！と思ってしまうところなのですが夜は\38,500～の銀座のお店だとかアマネムの朝食だとか思うと安く思えてくる不思議。
臨場感あふれるカウンター8席の向こうにはこだわりの「おくどさん」。
因みにこの日のゲストは私たち夫婦以外は3人組、2人組、ソロとすべてインバウンドな女性グループ。どなたも中華系ですがオーストラリアなど中国本土以外の方々（日本在住含む）のようでした。
美しい折敷。
禅の世界もイメージしているということでシンプルな折敷です。

オレンジジュース、濃くて美味しかったです。
◆自家製のすくい豆腐 塩 柚子皮
まずはコース仕立てにお豆腐を。シンプルながら最高の味わいです。濃厚。
◆伊勢かぶせ茶orほうじ茶
どうせですから伊勢の伊勢かぶせ茶を。
お隣のお二人組は朝シャン。羨ましい限り。

器も鉢多羅とまではいきませんが禅寺の朝食っぽいです。
ひとつひとつとても美味しくてご飯が止まりません。
またアマネム時代からなのでしょうか伊勢海老と鮑が贅沢です。

焼き立ての出汁巻き玉子を切り分ける前にプレゼンテーション。
太太、写真撮りすぎですよ。冷めちゃう（苦笑）

すべて焼き立て炊き立てで供されるあらまほしきおかずの数々。またまたご飯お代わりです。小食なのですがおくどさんで炊いたご飯も美味しいので箸が止まらないのです。
◆卵 鰹節
TKGまで頼んでしまいました。まだお茶漬けというオプションもあったのですが、さすがにギブアップ。
◆デザートはシャインマスカットと 梨にレモンジュレ掛け
個人的にフルーツ苦手なんですが数少ない好きなフルーツ☺
朝から鰯の骨も尻尾も全部平らげてしまうほどどれもこれも美味しく、インバウンドな方々にもAmazingなExperienceだったようです。

ごく控えめに言って最高の朝食です。
