【2023 日本料理 TOKYO 百名店】
伊勢志摩のリゾート、アマネムで総料理長を務めた稲葉氏が、2021年銀座の地にオープンした日本料理店「銀座 稲葉」。そのアマネムで「世界最高の朝食」に選ばれた朝食メニューをさらに洗練した朝食を頂けます。出来立てのだし巻き玉子や、炭火で焼き立ての魚など、ひとつひとつ手の込んだたくさんの料理と、炊き立てのご飯を一緒に楽しめます。人気のため予約が取れたのは「TableCheck」で2ヶ月前、9時一斉スタートです。
「朝と夜とで全然コンセプトが違うんですよ」と稲葉さん。夜はこだわった食材を楽しむ、ちょっと高級な贅沢。一方で、朝は炊き立てのご飯や巻き立ての玉子、炭火焼きの魚など、ありそうでなかった贅沢。今の日本における「本当の贅沢」をお客さんに味わってほしいという想いで、いつかお店をやるときは朝食をやる、と決めていたそうです。至れり尽くせりの朝食を満喫。ご馳走さま
