待降節に入り、クリスマスムード溢れる丸の内を抜け、今日はペニンシュラのPeterでランチ会！
プリフィックスで4品、選んだのはこちら。
・ローストカリフラワーのスープ
・紅ずわい蟹のクラブケーキ
・しあわせ絆牛の低温調理
・デザートの盛り合わせ
スープはなめらかで重すぎず、アンチョビの塩味をふくんだクルトンとバルサミコ酢いたあたナッツアクセントに。クラブケーキはずわい蟹なので、本場のものより中が細かく、甘みがあって美味。固定のイメージがあるので、パンチの効いたソースが欲しいところですが、ずわい蟹の風味を活かすにはさっぱりが合います。タルタル風のソースには刻んだお漬物、レモンの風味が良かったです。
低温調理の牛は柔らかなローストビーフですね。ほうれん草のピューレのほのかな甘さとオニオンベースのソース、その中のカシューナッツの歯応えがアクセントに。
デザートの盛り合わせは栗のムースケーキにマンゴープリン、フランボワーズソルベ。栗のムースにはローズマリーのジュレ、甘さの中にすっきりとした味が引き立ちます。添えられたバニラのジェラートが他の味を邪魔しないくらい軽かったです。
全体としては景色と雰囲気でいただく都会のホテル価格だな、という印象。クラブケーキは美味しかったです。
