四川料理の本場、四川省の麻婆豆腐を研究し尽くし開発された陳家私采の名物｢頂点石焼麻婆豆腐｣。
赤坂の1号店を初め現在では都内に7店舗を展開。
チェーン展開はせず、各店舗には経験豊富な料理長を厳しい試験を経て任用し陳家私采の味を守っている。
有楽町の国際ビルの地下1階。
飲食店街の｢クニギワ｣があり数多くの飲食店が展開。
土曜日の12時20分頃。
平日のランチタイムに比べると人は少なく、それに比例して影響している店も少ない。
土曜日も営業している陳家私采は結構な賑わい。
早速入店してお目当てのものを注文。
▪️頂点石焼麻婆豆腐 激辛 900円
・ライス(1回お代わり可)，水餃子(3個)，スープ，杏仁豆腐
・小辛・中辛・激辛・地獄辛・天国辛(+300円)
※天国辛はマニア上級者向けチャレンジ精神のある人だけにオススメ、小辛の280倍の辛さ
・｢旨い、辛い、香ばしい、熱い、痺れる」
・麻(しびれ)・辣(辛味)・鮮(旨味)・香(香り)・嫩(なめらかさ)
天国辛は到底無理、地獄辛もヤバそうなので激辛をチョイス。
麻婆豆腐以外は全てセルフサービス。
注文後にセルフコーナーで準備していると、その間に麻婆豆腐が到着。
提供がめちゃ早い。
テーブル席に戻り石焼麻婆豆腐とご対面。
グツグツと煮立つ麻婆の中に大きな豆腐が隠れている。
これを混ぜて豆腐をある程度崩して準備完了。
立ち上る湯気でむせそうになる。
まずはサラダを平らげて胃にものを入れ、麻婆豆腐を少し冷ましておく。
ご飯に乗せてひと口。
吸い込むとむせるので慎重に。
確かに辛いが麻婆の美味しさの方が際立っている。
辣油がたっぷりと浮いていてかなり熱々。
ご飯に乗せて冷ましながら食べ進める。
無駄な痛辛さはなく美味しく食べられる。
体は正直に反応し汗が噴き出てくる。
茶碗擦り切れくらいのご飯の量にしたが食べ終えると結構お腹がキツい。
水餃子3個をさらに詰め込みスープも飲み干す。
杏仁豆腐を食べられる余裕は無し。
研究を重ねた麻婆豆腐はかなりハイレベルの美味しさ。
かなりの満足度。またぜひ食べに来たい。
