[Summary] I was able to enjoy the depth of each and every item. I purposely skipped breakfast that day, but it was too much of a meal.It might be better to stay hungry all day long. [Environment] The store is located in the basement of a luxury hotel, so it is spacious and very bright. It was a Sunday afternoon, and there were about 3 customers. Two people were seated at the counter. I wanted to enjoy sashimi as well, so I went for the best snow course. The stainless steel open kitchen was very nice. [Food] Comments are written on each photo. Something I forgot to take a photo of. Tuna and squid sashimi. The melting tuna is the freshest. It was served halfway through the meal. Crab Tempura. It's already seasoned, so sprinkle with lemon, and if you like, add salt. I only vaguely remember whether tempura salt or tempura sauce would go well with it. Every time I made it and left it there, I introduced it to the general manager. I asked many questions about the production area, how to eat Tempura, and how to control the temperature of the tempura, and the owner kindly answered all my questions. I imagined that the temperature would be different depending on the ingredients, but it seems to be 190-200 degrees, and it seems that the oil temperature is judged by the sound and appearance when the ingredients are added. If the temperature is a little low, the batter will be sticky, and if it is a little high, the moisture will be lost. [Service] The service provided by the ladies in Japanese clothes made me think that this is a high class restaurant. The tea was always warm and replaced promptly, and the general manager and staff were always attentive and came right when I wanted to ask/make a request. . When I started coughing on the way, they took care of me and provided me with cold water right away. [Note] We had to move the seats for the fruit.
