至高の銀座、寿司屋巡り⑤
@鮨かねさか
「鮨さいとう」の斎藤さんなどを輩出した名店。
「鮨かねさか赤坂店」には、斎藤さんが独立なさった2007年頃に何度かお邪魔したが、コスパの良さで人気店になり、六本木一丁目に移った後は全く予約が取れなくなったので、もう遠い記憶。まぐろの赤身がおいしかったかな。
「かねさか本店」は、お値段も含め、敷居が高く、敬遠していたので、今回が、初体験となる。
もちろん、店内撮影禁止。

ねぎま汁、からすみ餅、鰒の白子、毛蟹は絶品。米酢のシャリは、いいあんばい、口の中で、パラパラほぐれる名人芸。久しぶりに美味しい干瓢巻きに出会えた。
今回のパトロールで、バランス、美味しさ、ピカ一です。
昨日がお誕生日だったという金坂さん、美味しゅうございました。
