This was my first time at a two-star Michelin Sushi. I was so excited that I restricted my diet and exercised for two weeks beforehand so that I was in perfect condition. An acquaintance of mine has a connection with Chef Kanasaka, so I was able to sit right in front of him. His movements and facial expressions as he made Sushi were as beautiful as a stage actor in the spotlight, and he listened carefully to even quiet conversations, showing great attention to detail in his service. The sake glasses and sake cups that were served were vintage Baccarat, and when I heard they were worth about 1 million yen, my hands felt like they were shaking as I held them. It was a dreamlike experience to be able to witness the finest ingredients, delicious Sushi and sake, the chef's skills and customer service. Photography was not allowed inside the restaurant.
