A Sushi with a 9-year wait for reservations. I was invited to one of the three precious seats, and my visit came true. The chef used to work at Sushi Masa, and since he is from my local restaurant, we had a great time talking. Drinks are limited to one type of bottled beer or sake. You can bring your own, but this time I only had sake. ・Botan shrimp, flounder ・Mizu octopus (Hokkaido), lemon → The texture was amazing! They also brought out some grilled ones halfway through, so I compared them. ・Bigeye tuna → Arranged to look like roses. You grill it yourself. The flavor was brought out better when it was grilled well. The sauce was so good that I asked for the recipe! ・Raw yuba → With sun-dried salt. From here, we started with nigiri! ・Medium fatty tuna ・Sumi squid ・Gizzard shad ・Ark shell ・Hayori ・Shrimp ・White roe I was in agony over the first dish of medium fatty tuna. It was unforgettable deliciousness. The decorative knife work on the gizzard shad and halfbeak was as beautiful as a work of art. The final sushi of piping hot whitebait was also excellent, and it was a moment when I truly felt glad that I had come in winter. If it had been allowed, I would have liked to have eaten more, but I left the restaurant with a heavy heart. For such quality, it was only 12,900 yen per person. Above all, the chef was a wonderful person, and I was happy to have had such a wonderful time. My next reservation is in 2033 (lol) I wonder how many more times I can go in my lifetime? Still, it's a Sushi I would definitely like to visit again!
