元王朝時代、モンゴル人に金属器具を取り上げられ包丁に不自由した漢民族が薄い鉄の破片で刀を自作し小麦粉の生地を削ったのが始まりと言われています。
生地の断面を “く” の字型の包丁で削りとり、沸騰する湯で茹でる山西省発祥の麺
素早く均等に削る技術は熟練を要するため、都内でも刀削麺を提供する店は限られます。
“激辛の店” としてテレビで頻繁に紹介されている味覚は名物の石焼麻婆豆腐と刀削麺をメインとしたガチ中華
