お正月早々だと路面店はお休みの所が多く、新年会で久しぶりにホテルレストランに伺いました。
こちらは28階という高層階で東京湾も臨める立地です。
ホテルならではの贅沢なスペースの使い方、ゆったり感など、食事以外の部分で満足できる付加価値というのも偶には良いものですね〜^ ^

・燻製里芋のクロケット
里芋の燻製は初めて頂いたかも。下味がしっかり付いていて香りがふわっと立ち昇って美味しいおつまみ。
【シェフからの可愛らしい一皿】
リゾットをイメージしたという一皿。
カリフラワーピューレとチーズを和えた物にカリカリのカリフラワーとパルミジャーノをカリカリに焼いた物を乗せたもの。更にパルミジャーノをすりおろして。
【国産天然猪のテリーヌ フォアグラとあまおう】
デザートのような見た目の美しい一皿に感嘆。
猪のテリーヌにフォアグラのムース、スライスしたあまおうと赤ワインジュレ、ホワイトチョコかな？とメレンゲを焼いた物。
猪のジビエ感を保ちつつも、フォアグラや苺の甘みと酸味、テクスチャーを組み合わせると優しく食べやすく変化する。このマリアージュも美味しい。
ワイルドとエレガンスの共存。この日の感動の一皿。
【ラルドを巻いた牡丹海老のポワレ 汲み上げ湯葉と百合根】
百合根のピューレに刻んだ胡桃、ソースアメリケーヌ。
濃いめの味付けでしたがまとまった美味しさ。
ポーションの問題でしょうか。牡丹海老がもっとインパクトのある大きさと質だったら大分印象が変わったかと。このお値段のコースでホテルで出せる範囲だと致し方ないところでしょうね。
【鮟鱇と鮟肝のロッシーニ 葉玉葱とトリュフ】
鮟鱇のムニエルのロッシーニ仕立て
ホワイト舞茸のソテー トリュフソース
こちらもソースは濃いめのしっかり系。
無難に美味しいです。
【蝦夷鹿のロースト パンデピスと白小豆】
火入れが良くてしっとりしていて美味しかったですね〜
白小豆のピューレとカリカリトーストのパンデピス
こちらはポーションも小さ過ぎず良かったです（笑）
白小豆のピューレなども面白ろかったし。オーソドックスな菊芋なども好きですが、カリフラワーなどよりは甘みと濃度があって蝦夷鹿に合ってました。

金柑のソルベとジュレ、蜂蜜レモンゼリー
爽やかで柑橘の酸味がキュッと効いた美味しさ！
【ショコラのポンポネット ベリーと山椒】
ブラックベリー、ラズベリーのムース、山椒のソルベ
所々に責めを感じるお料理が出てきます。
王道のチョコレートとベリーに山椒を組み合わせるという、こちらも両方にマッチして美味しかったです！

ミニャルディーズも変化球のある物で美味しかったです。
ソツのないお手本的なサービスというのも安定安心、気分の良いものだなぁ〜と思いました♪
ありきたり過ぎない、和の食材を取り入れていたり、モダンな要素も所々に散りばめられていて美味しく、全てのトータルなバランスの上質さで、
たまにホテルフレンチも良いなぁ〜と思えました。
ゆったり優雅な気分になれたひと時でした^ ^
