今回は優待を使用した。毎年家族のだれかが行くが、優待券お食事は量少なめなので（少なくとも本館のレストランは）、昼がちょうどいいでしょう。ここは披露宴の食事で感激して通う人が多いのでないでしょうか。かくいう私もそう。もうふた昔近く前になるなあ（遠い目）
さて正午前到着するとだれもおらず。優待はコースが決まっていて席にメニューカードがおかれている。グレープフルーツジュースを飲みながら待つ。生ハム到着。味わいがある熟成タイプで申し分ないが、量が・・一切れをさらに三等分した正方形片が干しイチジクとともに。フランスなら一切れがさらに３枚くらいなんだけど、優待では仕方ないか。
ビシソワーズは申し分なし。古典的だが手抜きなし。続く牛ステーキは焼き加減saignantは不可だそうで、a pointに。多分あの事件のせいでしょうね。量はやはり少なめながら、味はもう繊細とても美味しい。「beurre raifortはどこのバターですか？」と聞いて「産地でなくて西洋わさびをいれて練ったバターです」と言われてしまった。そうかraifortはhorseraddishだったのか。フランスにいて一回も買ったことも注文したこともなかったので知らなかった。ちょっと甘口で仕上げてあって牛と合う。
デザートはフォンダン・オ・ショラと果物タルトを組み合わせで。美味しい。最後にコーヒーが出てきたところで「ちょうどよかった」でした。自腹で行くならまだまだ当分階下のシェ・ロッシーニかな。最後に夜メニューを見せていただいたが、昔と違って魚料理メインがそれほど強調されていない印象。遠いむかし食べたアマゴのフリットは今でも記憶に残る美味だが、そういう珍しい品は見当たらなかった。
午後１時過ぎ出るまで私のみしかおらず、給仕もソムリエの方も申し訳ない。そういえばフランス・ディジョンの星つきレストランで盛夏昼に食事したら、我々３名しかおらず大勢の給仕に囲まれて王侯貴族というより衆人環視状態になってしまい閉口したのを思い出しました。
