フォーシーズンズホテル・大手町の最上階にあるフレンチのest(エスト) 。日本の食材を多く使った革新的な手法で、ミシュランの星を獲得したギヨーム・ブラカヴァル料理長。今回は和歌山のイタリアン「villa aida(ヴィラ アイーダ)」のシェフ小林寛司を迎えてのコラボレーションディナー。アイーダは 1日1組限定のオーベルジュで、超予約困難店。

今回の写真は、料理が出てきた順番に並べてある。ガーデンガストロノミーを謳う小林氏は、100種類以上の野菜を育てる。前菜に出てくる食用鬼灯(ほおずき) を始め、和歌山の土の香りを仄かに感じる・・そんな気持ちになる。日本の四季、その二十四節気の自然の移ろいを、お皿の上に表現している。体の中から浄化していく自分を感じられたのは、とても良い体験だった。
