For my husband who turned 39 years old, I made a reservation for est here on the 39th floor. ^^^v It opened in September 2020 when "Four Seasons Hotel Tokyo Otemachi" opened, and it will be awarded a Michelin star in 2023. When I thought of Restaurants in Four Seasons, I thought of SEZANNE https://tabelog.com/tokyo/A1302/A130201/13256878/, but that one has become a hard-to-reserve restaurant while I haven't been there for a while. I hope they will have a friendly competition. The restaurant's name "est" stands for Emotion, Saison, and Terroir. ♪ They offer innovative and contemporary French cuisine cuisine inspired by their deep knowledge of Japanese terroir, and about 85% of their ingredients are from Japan. The lunch at this restaurant offers a great view of the Skytree and the scenery is fantastic! At 39th floor, the view is too good as it is higher than other buildings! I hope there won't be any taller buildings to block this view. lol Since it was a celebration, I ordered lunch est chef selection 10-course 30,000 yen ♪ A Partager... / Appetizer Selection Susagoshi (Japanese Spanish mackerel fry) with kumquat and pepper was the first amuse! It is indeed a good thing that they make French cuisine with ingredients that can only be found in Japan, rather than the Japanese origin of the ingredients often used in France! C'est de Saison/ Amuse: Cheese and pumpkin Donuts ☆ The aroma of the cheese is very nice, and the champagne goes down a treat right from the start! French cuisine The flan below gives a gentle flavor along with the kyo yasai. baguette Mushrooms and hummus are used. What a great idea to combine hummus, a traditional home-style dish eaten daily in the Middle East and regions along the Mediterranean Sea, with baguette! This one is a jump up in originality♪ Il est dans tout ses états / Caramelized onions with soy sauce and abalones underneath This caramelized onions with soy sauce is an interesting and original flavor that doesn't seem to exist♪ This dish feels very Japanese, yet still has French cuisine a sense of originality. I think the originality of this dish is quite high ♬ Entre origine et voyage/ trout and garland chrysanthemum I tried it with fish because you can add truffles if you like... I've never had garland chrysanthemum and truffles before but they go well together... The addition of wasabi gives it a strong Japanese Cuisine feel... Bœuf I served the duck sauce with burdock, but all the four are cooked in different ways. The four types of burdock were: fried burdock, sesame vinegar, roasted burdock, and soy sauce. Of course, the duck was wonderful, but I was more interested in the burdock that was served with it. Each bite had a different flavor, and the combination of the main meat and burdock was truly amazing! Peau de Soja/ Hardened meringue with kumquat and chestnuts, topped with tangerine sauce for a Japanese flavored French cuisine dessert......to match the work of Piero Drazzo......a dessert with strawberries, apricots and sesame meringue to match the artist's painting placed in front of us.... French cuisine Japanese-style meal classic French cuisine This is the first time I've had such a highly artistic dessert, and the idea is very interesting. I liked the fact that they were able to create originality with Japanese ingredients......and the fact that reservations can be made quickly! By all means, please come to this restaurant for your anniversary!
