東京駅八重洲口の目の前にある東京ミッドタウン八重洲3階に2023年オープンした、激戦区名古屋で1995年創業し「ミシュランガイド愛知・岐阜・三重2019特別版」でビブグルマンの評価も得た人気のうなぎ専門店の東京進出2店目です。
いつも混んでて平日でも並ぶこともあるため、11:30に予約して訪れました。
訪れてみると、すでに店内のテーブル席は満席で、我々のテーブルのみ空いていました。
うなぎが焼けるまでの間、サービスのお漬物が出てきます。
野菜が少しパリパリ何が残ったキャベツに、ごま油が染み込んだキュウリに昆布と胡麻。
胡麻油の香りが食欲をそそり美味しく、お箸が止まりません（笑）
そして嬉しいことに、この美味しい漬物はお代わり自由なのです！
この日は頼んだのは『上ひつまぶし』
鰻重も美味しいんだけど、色々な食べ方を楽しむことができるひつまぶしが好きです。
こちらのお店の鰻の焼き方は1000度を超える炭火の「地焼き」で、旨みや脂肪分を一気に閉じ込めた後、炭火でじっくりと身に火を通したうなぎは、表面はパリパリ、中はふわふわでジューシーに仕上がっていました。
まずはお櫃の中の鰻にしゃもじで十時の切れ目を入れ、4回分に分けます。
久々なのでセオリー通り、１杯目はそのまま、２杯目は薬味（山葵、ねぎ）、3杯目は出汁茶漬け、そして4杯目は好きな食べ方。
どの食べ方も美味しかったですが、脂がたっぷり乗った鰻を山葵と一緒に食べるのが好みでした。
ご飯が見えなくなるくらいたっぷりと鰻が乗っているので、お腹も大満足です。
