東京八重洲ミッドタウンにある、ブルガリホテル東京のメインダイニング
「Il Ristorante Niko Romito」
誕生日のお祝いディナーで伺いました。
コースのまず最初に出たスペシャリティ「野菜のアブソリュート」は、水を一切加えずセロリ、人参、タマネギのエキスを抽出したのだそう。
透き通った黄金色のスープは旨みが凝縮されていて、このスープを作るだけでもどれだけ手間ひまがかかっているのだろう、と初めから感動。
黒トリュフがたっぷりとかかったフェットチーネは鴨のソースを使用しているそうで、これもまた絶品。
他のお料理もスパイス使いが絶妙だったり、どこかオリエンタルな要素を感じたり、今までに体験したことのない味わいで五感で楽しませていただきました。
イタリアンだけど決して重くなく上品で繊細なのはさすが。
チョイスしていただいたワインもとても好みで終始満足なディナーでした。
