日本橋の弁松総本店の「白」。
お弁当のおかずは同じでもご飯が赤飯のモノは「赤」。白いごはんのは「白」という。粋な名付けで、どうにも小豆が混じった赤飯は苦手なもので、ココではいつも白を買う。
経木の折に詰められていて、包みをあけると一番最初に手に触れるのがちょっと湿った木の食感。余分な水気を吸い取って、おいしい状態が持続する。昔の人の知恵をそのまま守った姿にまずはニッコリ。
煮しめがメインのおかずのあれこれ。鶏のすり身のつくね団子に里芋、椎茸、レンコン、タケノコ。どれもどっしり甘くって、このおかずだけを「甘煮」と呼んで売っているほど。
同じく甘い卵焼き。ちくわぶ、かまぼこ、そしてカジキの照焼といつもかわらぬ内容で、これ以上足すこともなく引くこともなく、程よく完成されているんだとこれまたニッコリ。
ご飯のおかずに良いように、しっかり味がついて入るけどやさしい味で、中でもカジキのフックラしてて脂がジュワリとおいしいコトに感心します。頭の栄養、ココロの薬。そんな感じのオゴチソウ。仕事がたのしくすすみます。
