長年、関東に住んでいると、関西、特に京都の
特有の鮮やかな出汁の味を忘れてしまいます。
・・と言うことで、
不安半分、期待半分・・という気持ちで訪れたのが
東京・日本橋にある鴨蕎麦の専門店 ”浹（アマネ）”さん。
店構えはすごく高級そうで、
店内も非常にお洒落な創りなので、少々敷居が高い・・という感じなのですが
メニューを見てもお値段はとても良心的。
注文は・・
京都と言えば”鰊（にしん）蕎麦”というイメージが強かったのですが、
ここはやはりこのお店の十八番の
”鴨そば（温） 980円（内税）”を いただくことにしました。
夕方に伺ったので、やはり多くのレビューでも人気の
”かやくご飯” をいただきたかたったのですが・・・
残念ながら、 ”お昼の部で売り切れてしまいました” ・・とのこと。ｻﾞﾝﾈﾝﾃﾞｽ
お店のHPにもあるように
ここの蕎麦は”石臼挽き”の本格的なもの
鴨肉も厳選モノで、何と言っても”昆布”のきりりっとした出汁。
出てくるまで結構な時間がかかりましたが、
やはり、茹で蕎麦をチャチャと温めた駅そばのようにはいきません。
”鴨蕎麦”は、出汁もさることながら
柔らかい”九条ねぎ” と、旨味の詰まった”鴨肉”が素晴らしく美味しいです。
鴨からも良いダシが出ますので、
ツユの出汁の美味しさを楽しむならば、”鰊蕎麦”の方が良いでしょう。
今回いただけなかった”かやくご飯”も合わせて
次回の楽しみにしたいと思います。
このお店は、鴨料理も含めて色々と酒の肴も備えており、
夜の部では、蕎麦前にお酒と一緒に京都の味を楽しむのが良いようです。
残念なのは、東京のお店らしく、
土曜日はお昼までの営業で、日曜日が定休日。
お昼にチョット・・というのが難しいのが残念です。
東京では中々味わえない本格的な京都の蕎麦・・
これは関西から来た人にとっては救世主的なお店かもしれません。
